Did you get all that? Okay...seriously - read it again. GIRL SCOUT THIN MINT COOKIE ICE CREAM POPS. How did I think of this - honestly - while laying in bed, trying to go to sleep- the idea just POPPED into my mind! I'm SOOOOO SOOOOOO SOOOOOO happy they turned out EXACTLY how I had imagined in my mind!

Are you drooling yet? My absolute FAVE Girl Scout Cookie is the THIN MINT! ESPECIALLY - when they are frozen - right? So...let's get to it - here's the "HOW TO" on making them!
1 Boxes of GIRL SCOUTS THIN MINT COOKIES (KEEP THESE IN FREEZER UNTIL YOU ARE READY TO USE THEM!)
1 Half Gallon of GIRL SCOUTS THIN MINT COOKIE ICE CREAM
1 Package of GREEN CANDY MELTS
1-2 Bottles of CHOCOLATE FLAVORED "MAGIC SHELL" ICE CREAM TOPPING
1 Package Cookie Sticks
Styrofoam (for drying the pops)
STEP 1- Put scoop of ice cream on to one of the thin mints. Make a "sandwich" by putting a 2nd one on top of it. Then - insert the cookie stick into the middle of the sandwich. Wipe excess of ice cream off around sandwich to make it smooth for dipping. :-)
Place ice cream sandwich pop back into freezer onto a pan with wax paper on it. Do this EACH time you make the pop!! You want to keep the pop as COLD as possible at all times!
STEP 2 - Follow directions on the back of the candy melt bag and melt the candy melts until smooth. THEN - Pour melted candy melt into a TALL THIN cup or glass - but WIDE ENOUGH for the ice cream pop to fit into. You want to be able to dip the WHOLE pop in ONE dip - so you need it deep enough.STEP 3 - Get your styrofoam block ready by poking pre-made holes with the cookie sticks into it so you can place the pop into it for drying. Keep the styrofoam block IN THE REFRIGERATOR. DIP YOUR ICE CREAM POP. THEN, PUT EACH POP INTO THE STYROFOAM BLOCK THAT IS IN THE REFRIGERATOR UNTIL THE CANDY COATING IS DRY.
As SOON as the candy coat is DRY - IMMEDIATELY - put the pop back into the wax paper lined tray that is in the FREEZER.
(Pretend this is in the refrigerator). :-)
STEP 4 - (If you want to put the cute shamrock on the pop) - place a HEAVY DUTY FREEZER QUART SIZED ZIP-LOCK BAGGY inside a cup and fold over the sides. Poor the rest of the MELTED candy melts into the baggy - you are going to use it for "piping" the design. You'll cut the corner of it - MAKE SURE ITS NOT TOO BIG - OTHERWISE the candy coating will come out too fast! BEAR WITH ME on the last photo in this step - I was trying to do it AND take the pic at the same time - so the shamrock does NOT look perfect!
ONE AT A TIME - take out the cookie pop out of the freezer and decorate it - then place it BACK in the freezer and get a new one - they will melt EVERYWHERE if you don't keep them cold! :-) DUH....
Look at how fun these turned out!!! AND - let me tell you - they taste AHMMMAZZZING!!!
For VARIATION #1: Use the Smuckers Magic Shell Ice Cream Topping instead of the candy melts - do the same thing and poor into a tall thin cup/glass. Dip the same way....
Seriously - these taste as amazing as they look! AND they are just so festive!! :-)
Some tips to rememer:
1). FREEZE the Girl Scouts Cookies before starting!
2). Work FAST - you are working with melting ice cream AND melted candy that hardens!
3). Get your work area prepped before you start! Put your styrofoam in the fridge and the pan in the freezer before you begin!
